Large pinch each ground cinnamon, cayenne pepper and grated nutmeg
1 bay leaf, finely crumbled
2 tablespoons olive oil
Salt and freshly ground black pepper
450g (1lb) boned loin of pork, cut into 2.5cm (1 in) cubes
Lemon slices and bay leaves, to garnish
In a bowl, mix together all of the ingredients, except pork and garnish.
Add pork and stir to coat evenly with marinade.
Cover bowl and leave in refrigerator for 8-12 hours, turning pork occasionally. Preheat grill.
Thread the pork onto small skewers.
Cook under hot grill for about 7 minutes, turning occasionally, until the pork is cooked through but still juicy. Garnish with lemon slices and bay leaves and serve hot.
