Prawn Stuffed Eggs

Ingredients

  • 4 hard-boiled eggs, peeled
  • 4 tablespoons mayonnaise
  • 55g (2oz) peeled prawns, chopped
  • Salt, cayenne pepper and lemon juice, to taste
  • Lettuce leaves, to serve
  • Whole prawns, paprika and parsley sprigs, to garnish

Slice the eggs in half lengthways. Using a teaspoon, scoop the yolks into a small bowl; reserve the white shells.

Add the mayonnaise to the bowl and, using a fork, mash with the yolks and prawns. Add salt, cayenne pepper and lemon juice to taste.

Divide the prawn mixture between the egg whites. Arrange on lettuce leaves and garnish with whole prawns, paprika and parsley sprigs.
