Grilled Prawns

Ingredients

  • 450g (1lb) raw Mediterranean (king) prawns, peeled, leaving tail shells on
  • 5 tablespoons extra virgin olive oil
  • ½ clove garlic, finely crushed
  • Juice I lemon
  • Salt and freshly ground black pepper
  • 1 small beefsteak tomato, peeled, seeded and finely chopped
  • ½ small, fresh red chilli, finely chopped
  • 1 tablespoon finely chopped fresh parsley.
  • Parsley sprigs and lemon slices and rind, to garnish.

Using a small sharp knife, make a fine cut along spine of each prawn and remove the black vein.

Thread prawns onto small skewers and place in a shallow dish.
In a small bowl, stir together 2 tablespoons oil, the garlic, 1½ tablespoons lemon juice and salt and pepper. Pour over prawns and leave for 30 minutes

Preheat grill. Lift prawns from dish and place on grill rack; brush with any liquid remaining in dish and grill for 3-4 minutes until bright pink. In another small bowl, stir together the remaining oil and lemon juice, the tomato, chilli, parsley and salt and pepper. Spoon over hot prawns and serve garnished with parsley sprigs and lemon slices and rind.
