Cheese Fritters

Ingredients

  • Olive oil for deep frying
  • 2 egg whites
  • 115g (4oz) finely grated mature Manchego or Parmesan cheese
  • 55g (2oz) fresh breadcrumbs
  • About 1 tablespoon finely chopped fresh herbs, such as parsley, chives and thyme
  • Salt, freshly ground black pepper and paprika
  • Thyme sprigs, to garnish

Heat a deep fat fryer two thirds filled with olive oil to 18OC (350F).

Meanwhile, in a bowl, whisk egg whites until stiff but not dry.
Lightly fold in cheese, bread- crumbs and herbs.
Season with salt, pepper and paprika.

Form egg white mixture into small walnut size balls, adding balls to hot oil as they are shaped.
Fry for about 3 minutes until golden.
Transfer to absorbent kitchen paper to drain. Serve hot, garnished with sprigs of thyme.
